    This is a wonderfully in-depth introduction to baking with Spelt, an ancient grain which I knew very little about until now. As a an avid baker, I have yet to come across a spelt cookbook which is as thorough as Alison’s, and have enjoyed incorporating spelt into my daily sourdough baking.
    Highly recommend for any home baker!

    I made the switch recently from modern grains to spelt and WHAT A DIFFERENCE! The taste is lovely and I’ve found it’s much easier to work with than red and white grains. Alison has written these recipes so clearly and the pictures are beautiful and inspiring. In the past I’ve wasted so much time on the internet trying to find WHOLE grain recipes – it’s nearly impossible – this recipe book has all you need in one beautiful place.
